Homeland security......

There was chaos here yesterday.


Pure chaos.


I refuse to name any names.....


but it looks like...it might be one of the two sitting above.


Homeland security was breached....


broken into....


deleted...


then discarded like a piece of trash.


What i'm talking about is my beloved twitter account.


yes...i said it.....


i am a twitter addict....


and someone....again..not naming anyone


but they got ahold of my iphone....


to play a game....


then hit the wrong button.


DELETE.


I mean....how were you going to know that we went to


Ihop this morning....


and that they now have nutella crepe's.....


not that i had any.....


but if i did....


i would want to tell you that they were really good.


It's very hard to get ahold of anyone at Twitter headquarters....


very hard.

Now onto some prettier things.

These are my new chandie shades.

handmade of course.

{Ahem}

not by me though.

Sometimes in the creativity department...

i come in a long last.

I was the girl that was always chosen last in school....

you know that kid.....

everyone is choosing teams...and then there are only three kids left...

it was me.......

the nose picking different sock wearing kid in thick glasses....

the dyslexic girl who grew boobs in 3rd grade and now wears a 38dd.

yup....

sometimes i'm just last in some departments...

but it's okay.





I recruited my good friend Jacki to pretty up my dining room

chandie for me.

Jackie likes to sew.

So we are teaming up.

Team creative and team not so creative.

She's creative......

and with her creativity...

and my.....

hmmmmm.

my what.

Anyways....

we MIGHT team up and you can buy her

fabulous chandie shades soon.

She might not even want me part of her team...

i guess i should ask.

After she reads the team picking part...

she might just not return my calls.

Dust and i are not good friends.....

Oh...and i realized that the shirt Fin is wearing in the photo at top is the same shirt
he wore at the tea party on Tuesday. I guess i will do some laundry.

Chicken in the house....

It's been two weeks....at least....

which means my hubby has asked for me to step up

and please cook something.

Remember my philosophy....

if you cook to often...

then the family will come to the realiziation

that i can indeed cook and will want me doing it everyday.

If i do it every two weeks....

then it's more like a treat..

in which no one actually expects it.

So here is what i made yesterday....

a family favorite around here.

Rotisserie chicken enchiladas.

(i will list the ingredients at the bottom of the post..but will walk you thu this easy peasy dish}



In a saucepan...combine 3 cups of chicken broth & 1/3 c flour.





Cook over medium heat...stirring until broth begins to thicken.




Once thickened...

add salsa, chillies, onion {optional}, garlic {optional}, sugar and seasonings.

















accidents do happen.

not a big deal.

just make sure you have clean hands when you fish the whisk out.

Seriously...do you know how hard it it so take photos while stiring?








Monterey jack cheese all cut into pieces.

{or you could go the easy route and buy shredded monterey jack....

but i happened to have a block of it in the fridge}







If you are NOT a chicken person...than i suggest you look away.

right now.

My family loves rotesserie chicken.....so much in fact..

that if i don't cut it all up right away for the enchiladas..

then they will eat it to the bone.

Anyways.....

cut up the chicken into pieces.....

you won't need all of the chicken..







This is where i like to get my little set up in place.....

all organized.






Make sure you have your baking dish all ready...

this recipe makes 2 batches...

so you can freeze one if you want.






Coat the bottom of the baking dish with the thickened sauce...



Soften the tortillas by dipping them in the hot mixture....

which is now simmering on very low.






Once you soften the tortilla...

place it open in the baking dish and fill with

chicken, some cheese, and black beans{optional}.




Roll it up and place them against each other...














My baking dish fits 6 total...but if yours is larger..then fit as many as you can.





This is where it gets good.

The secrets in the sauce....

you will add 3/4 c sour cream to the hot mixture now....












Mix thoroughly






and pour it over the enchiladas.




Don't be stingy.......go ahead and drown those puppies...

i mean chicken...

go ahead and drown that chicken....






Sprinkle the top with shredded cheese...

it's up to you....

little or a lot....

it's your family.




Bake at 400 for about 15 minutes.....

if you like guacamole....

then top it off with that.

I didn't have time to make my own...

seriously....have you seen a ripe avocado in winter?

nope..i didn't think so.

{so i bought the already made guac}
......



Rotisserie chicken Enchiladas:

3 c. chicken broth

1/3 c. flour

12 oz. jar of salsa

4 oz. can fire roasted green chillies

1 c. onion {optional}

1 chopped garlic clove {optional}

1 tsp. sugar

1 tsp. ground cumin

1/2 tsp oregano

1 can black beans

Rotisserie chicken, cut into small pieces

12 tortillas {corn or flour}

Monterey Jack cheese, cut into strips {or buy shredded}

3/4 c sour cream

1/2 c shredded cheese for sprinkling on the top {monterey, or mexican blend}

Raising real boys.....

I am a good mother....

well...

most of the time.

Trust me....my kids will tell you that

there are times when i lose it.

lose it big time.

But i am normal...

at least i hope so.

If you don't know my Fin...he is a lot like me...

in the regards to his personality.

He's a jokester....

and with a completely sober face, he will look you

straight in the eyes and say...

he did not eat the lemon bars.

He will swear he didn't eat them....

and not even blink while he's telling me this.

The catch is.....

he has his fingers crossed behind his back.

Somewhere he learned that one can tell you a little

white lie but it's all ok because your fingers are crossed.

Then he will look at you and say...

i'm just kiddin mom....

just kiddin.



While Fin had a friend over yesterday...

playing like boys do....

i was up in Lola's room getting it ready for a little tea party.

Lola was going to have a friend over after school,

and had asked if they could have one.

So i made some lemon bars...{thank you Trader Joe's}

set the table....

put some flowers out...

and left the room.















I headed into the kitchen after i had gotten the tea party all ready...

and started to make some lunch for the boys.

The Boys.

Boys who decided to have their own tea party...

boys who love lemon bars as well...

and lemons...

and flowers.




Boys who like to smell the lemon bars...

and pick bugs out of the flowers.





boys who wanted to set up a Star Wars camp on the cake stand...



I was a good mother yesterday.

I let the boys have their own tea party.....





I'm raising boys...
who will blow the girls away...
at a tea party.

Let's start off with what we ordered first.




no...it was not a mimosa....




even though the pear and current mimosa was calling my name.




calling my name really loudly...




but i declined.




We started off with:




grilled polenta & herbed chevre & sliced pears with a honey ginger sauce.




{i'm drooling all over now as i type away}















are you still here.....




good.




Seriously...who needs to cook breakfast when you can go out...




or is that just me....




i like to go out for breakfast.....




it's my favorite meal of the day...




that is....if i can go out.




Really...one can only eat so much oatmeal at home




before they turn into oats themselves.




After our little shared first course...




we moved on.




I ordered tri colored benedict.




{yes..i'm drooling again..}




Eggs benny ....

herbed hollandaise sauce.....

&



sun dried tomatoes...




with a balsamic drizzle.












or you could have been one of my friends..




and ordered...




a breakfast quesadilla.




Spinach...avocado...




cheese from the cheese maker that resides




in the back of the restaurant.




Sliced pears that are grown on the pear tree in the front yard.




just wanted to make sure you were still here.

At this point you really are going to want to stop.




I'm warning you.




STOP RIGHT HERE




Unless of course you like to look at houses...









because i had an appointment to see a charming house




that's for sale.....




a few blocks from the restaurant.




I know what you are thinking...




why is she looking at a house?




I know....




my husband thinks the same thing.




But....




he doesn't question me anymore.




We have a solid relationship....




it's a ...




don't ask....don't tell policy.




He doesn't ask anymore...




and i don't tell.




This policy doesn't work for everyone.....




it didn't work for the Army....




but it works in the Buick household.












I am going to let you just peruse thru this plaqued historic home...




built in 1860.




I am also not going to tell you that it's for sale....




or that the lovely owner let me in ..




or that i tried to lock him out of his own home...




so that i could sit on his lovely furniture...




or take a bath in his claw foot tub..




or lick his Swedish antique clock...




{did i just say ..lick the clock!?..}
